Scrambled Eggs Sandwich with Asparagus

- 8 asparagus spears
- 1 whole egg
- 1/2 cup egg whites
- 1 slice Ezekiel bread
- parmesan
- olive oil
- salt
- pepper

1. Drizzle the asparagus with some olive oil and add some salt and pepper to taste and place them on a baking sheet in the center rack of your preheated to 400 degrees F/200 degrees C oven. Bake them for 15-20 minutes.
2. Meanwhile in a small mixing bowl scramble the eggs with salt and pepper to taste. Cook the eggs with a little bit of olive oil in a nonstick pan, stirring them occasionally.
3. Toast your bread on both sides. You can use a toaster or you could put them on a separate rack in the oven where you're baking the asparagus.
4. When the eggs are almost done, you can add a little bit of cheese of your preference (we LOVE parmesan!).
5.When all the ingredients are done, place the scrambled eggs and a few asparagus spears on the toasted bread and voila!
Enjoy immediately!
